Grape Variety Used: Grillo 100%
Location: Buteresi hills – Arancio Mautana district – 350m above sea level
Soil: Calcareous mixed with marly clays
Vineyard: 4,000 vines/ha arranged east-west with double-arched cane pruning
Harvest: Manual in early August – 9 tonnes/ha
Agronomic Practices: Manual cultivation without the use of chemical substances, organic farming techniques, micro-irrigation
Vinification: Without skin maceration, use of natural yeasts, malolactic fermentation not carried out
Ageing: In stainless steel for about three months, aged on the lees with batonnage (lees stirring)
Organoleptic Characteristics: Greenish-yellow colour; aromas of citrus fruits, white flowers, green apple, aromatic herbs; elegant and savoury taste with excellent acidity and persistence
