Manufacturing Process

• Vineyard Location: Located in the Centre of Sicily (Caltanissetta), C.da Cusatino, at $580$ meters above sea-level in lime-clay soils.

• Harvesting: Early October, by hand.

• Yield: $90$ quintals per hectare.

• Vinification & Maceration: In stainless steel tanks at a controlled temperature of 25∘C for $8$ to $10$ days.

• Conservation: In steel tanks at a controlled temperature of 15∘C.

• Ageing before Release: $12$ months in 4th passage wooden barrels.

• Bottled Wine Conservation: 16∘C.

Organoleptic Characteristics

• Colour: Intense red with violet tints.

• Smell: Typical aromas of red fruit and spices.

• Taste: Full, balanced, and velvety taste.
