Production Area

Produced in Western Sicily, on their own Casale estates in Buseto Palizzolo, the cradle of agricultural wisdom of the ancient Monte San Giuliano (Erice).
Manufacturing Process

Harvesting: Manual picking into crates with careful selection of the grapes.

Pre-Pressing: Upon arrival at the winery, a further selection of the grapes is carried out before soft pressing.

Fermentation: Primary fermentation begins in steel tanks. The last 7/8 g/l of sugars are fermented in the bottle for the sparkling process (secondary fermentation), where it ages on the fine lees for approximately 8 to 12 months.
Organoleptic Characteristics & Food Pairing

Colour: Yellow with slight greenish reflections.

Bouquet: Intense and broad, ranging from bread crust (autolytic) notes to fruity hints of citrus and golden apple, along with floral notes and Mediterranean scrub.

Palate: On the palate, it is fresh and enveloping with a pleasant saline/savory finish that prolongs its persistence. This is a white wine with an intriguing personality and is destined for surprising longevity.

Food Pairing: Pairs well with shellfish dishes and flavourful first courses such as fish couscous or spaghetti with clams, particularly with the addition of the fine sediment (feccino) that remains at the bottom of the bottle when serving.
