This Sparkling Rosé Wine features intense perfumes of freshly picked fruit and flowers, particularly cherry, strawberry, and rose. On the palate, it exhibits characteristic flavours of fresh fruit.

Manufacturing Process

Vineyard Location: Located in the Centre of Sicily (Caltanissetta), C.da Cusatino, at 580 meters above sea-level in lime-clay soils.

Harvesting: First week of September, by hand.

Yield: 120 quintals per hectare.

Vinification: In stainless steel tanks at a controlled temperature of 14 
∘
 C.

Malolactic Fermentation: Not held.

Elaboration: In an autoclave (pressure tank) and isobaric bottling (Charmat method).

Bottled Wine Conservation: 16 
∘
 C.

Organoleptic Characteristics

Colour: Clear Rosé.

Smell: Typical fruit flavour, especially strawberry, rose, and cherry.

Perlage (Bubbles): Intense and persistent.

Taste: Very fresh, slightly tangy/sourish, and rich in freshly picked fruit flavours.

Food Pairing: Appetizers, strongly flavoured fish, white meat, and generally with delicate food.
